Matthew Burch Wants to Take Local Food Beyond the Farmers Markets

Matthew Burch is an Oklahoma native who has been working in our food system from restaurants to grocery stores, on farms, farmers’ markets, and in food distribution since 2001. His company, Urban Agrarian was founded in 2008 to act as a distributor of Oklahoma agricultural products and other locally produced foods. Headquartered in the historic Farmers Market District, Mr. Burch hopes to help revive Oklahoma City’s once flourishing produce district and bring an increased viability to local food production statewide.

Kristin Walter and Talis Apud-Hendricks are passionate about ending world hunger in our lifetimes. After meeting in college in 2004, they co-founded FeelGood as a student organization with the belief that even something as small as a grilled cheese can make a difference. Kristin has been FeelGood’s Executive Director since graduating in 2005 with a Finance Degree. Under her leadership, FeelGood has grown from a single-campus initiative into a vibrant national movement with over 29 chapters and 17 more currently seeded. FeelGood partners with over 1200 student volunteers, impacting the lives of thousands and raising over $1.4 million for the end of hunger. Talis manages the inovation for FeelGood’s education and technology programs. With an M.S. in Innovation from the Monterrey Institute of Technology, she has pioneered an online platform for meaningfully connecting FeelGood’s many student communities and developing their educational and entrepreneurial goals. Before coming to FeelGood, Talis was a professional athlete, qualifying for the Mexican Olympic team in 2008. She has over seven years experience as a consultant in intercultural management.

Dr. Christina Warinner has excavated around the world, from the Maya jungles of Belize to the Himalayan mountains of Nepal, and she is pioneering the biomolecular investigation of archaeological dental calculus (tartar) to study long-term trends in human health and diet. She is a 2012 TED Fellow, and her work has been featured in Wired UK, the Observer, CNN.com, Der Freitag, and Sveriges TV. She obtained her Ph.D. from Harvard University in 2010, specializing in ancient DNA analysis and paleodietary reconstruction.

Julia Ehrhardt Begs For People To Learn To Cook From Scratch

Raised in Springfield, New Jersey and a graduate of Duke and Yale, Ehrhardt teaches courses on American Literature, Women’s and Gender Studies, Food Studies and coordinates the Education Abroad program in Arezzo, Italy for the University of Oklahoma Honors College. She is an avid bicyclist, cook and food activist.

Courtney Griffin Talks On How We Can Affect Our Genes

Because we want to understand what genes are required for blood vessel development, Courtney Griffin studies certain enzymes that help turn genes on and off. These enzymes are specifically involved in relaxing DNA that is normally tightly coiled up in our cells. Dr. Griffin is now an Assistant Member in the Cardiovascular Biology Research Program at the Oklahoma Medical Research Foundation after receiving her B.A. from Harvard University and her Ph. D. from the University of California San Francisco School of Medicine
